EARTH & HEART = anagram (photos from today)

I usually don't wear message shirts. Just not my style I guess.

But today I felt good wearing it.

The shirt felt right and good. Literally because it's 70% bamboo & 30% organic cotton and is the softest shirt I own; and figuratively because today, on Earth Day I felt free to be passionate about the environment.

We know Earth Day should be Every Day, and that is even more crucial after 8 dismal years with Bush (arguably the most anti-environmental president in our nation's history). No matter who wins, it'll be a greener white house. We can make sure of that by educating ourselves and those around us, becoming politically active, and voting with our dollars by supporting those who are making efforts to use good environmental practices. Be a proud tree hugger!

Feeling empowered, I decided to make cupcakes! I only needed: Cherrybrook Kitchen chocolate cake mix and vanilla frosting mix, Keebler Bug Bites (yes, they're vegan), the usual suspects, and a jar of beet juice.

I've been "dying" to try natural food dyes since learning that artificial food colors are derivatives of either coal tar or petroleum. Eck. Red #40 has been banned in at least 8 European countries and linked to several health problems. Oooh.

For a craft, the kids painted ladybug rocks.

I vowed that I wouldn't buy anything from the store, and I didn't.

I'm proud of my resistance to not buy more black paint, even though we were dangerously low. You can see, that as it turned out, there was plenty to go around.

We went for a hike to explore some of nature's wonders.

There were 4 moms and 9 kids whose age ranges 1 to 5 years.

Then, we came back for cupcakes. Ta Dahhh!

I like this pastel shade of pink and will keep the beet juice in the fridge. Next time we cook kale, I plan to bottle some of that juice as well.

Anna mentioned that on St. Patrick's Day she put some kale water in with the mashed potatoes and they turned a bright shade of green. Very cool!

My eco-friendly friends brought some cool gifts. Wendy was finished with a couple copies of 'body + soul' and passed them on to me. I flipped through and spotted ads from Matt & Nat and articles on power foods. Another green gift was a basil plant from Anna. Thank you!

Next time, I'll post about my Earth Day gift to myself.... A COMPOSTING BIN!!!!!! Can you tell I'm excited?! Thanks for your composting tips, Anna and Lynn, I'll add water tomorrow. Until then, happy Earth Day today and always.

Cherrybrook Kitchen

A dear friend was coming over for lunch so that we could celebrate her birthday. I decided to try these Cherrybrook Kitchen baking mixes I brought home from California.

It's a dairy free, egg free, and nut free line of baking mixes. We read through the ingredient list just to find out exactly what was inside the box. We nodded in agreement recognizing each item and that we actually had it stocked in our own kitchens.

And, the cupcakes were delicious! Even my finicky daughter, who often shuns sweets, thought these were the absolute bomb. Hey, I felt good serving one of these for dessert after a healthy meal was eaten, and she thought the exchange was good, too. I used the chocolate cake and chocolate frosting mixes. Too bad they don't sell this at our Co-op, but looking at the Cherrybook store finder, I see that Fred Meyer does. As a mom, these mixes are the perfect solution for classroom treats, which need to accommodate food allergies.

We made another snowman! Even though most of the snow is melted by now, we've had more this year than in the recent past. This is such good news!

Anyone else have good news to share? I'd love to read your answers to this question posed recently by Cafe VegNews.

Sifting

I've been getting my money's worth out of this flour sifter I found at a garage sale.

It's a simple, fun, and helpful task that gets the girls involved.

Following is a look at what's been the result of all that sifting....

'Berry Oat Squares' from La Dolce Vegan!

I used some of my apricot-pineapple jam along with frozen blueberries for the filling, which was a tasty combo.
I guess this looked too healthy for my girls, and they wouldn't even try one, so I ate them all myself! I don't suggest this. Instead, make them when there's others to partake because you just can't stop 'til they're gone.

'Banana Bread' from The Damn tasty Vegan Baking Guide!

I added a handful of chocolate chips because it draws interest from the girls. This was good and we enjoyed it warm from the oven, though it seemed too moist to enjoy later that day. I used a silicone non-stick and perhaps that's the reason? Or maybe it just needed a bit more time to cook? Or, I over-filled the pan? Who knows! :)

'Banana Chocolate Chip Muffins' from The Joy of Vegan Baking.

Can you tell I like this flavor combo? This recipe is perfect for using up ripe bananas, taking four. I had 3 large bananas, and instead of mashing them, I pureed for a consistent texture. These muffins were perfectly delicious, and the whole family enjoyed them. I'll be making these again soon.

'Chocolate and Vanilla Marble Cupcakes' from Vegan Cupcakes Take Over The World.

These were fun to make, and a bit messy. I'm a competitior, and read the text, "Add both to the cupcake liner at the same time, side by side. Some people may not have the hand-eye coordination to do this (as easy as it sounds)...." to be a challenge! lol! Here is my handywork before clean-up. :)

'Chocolate Mousse Topping' from VCTOTW crowns them.

Silken tofu makes for the most luscious & light topping, along with providing a nice shot of protein from an unsuspected source.
I made them for Art's birthday last month. We both thought they were good enough, but nobody took the last one, and I probably won't make them again unless I need some coordination training. :)

I had a cookie recipe in mind, so first I needed to prepare the cookie sheets.

I like to alternate stacking cookie sheets and parchment paper. The top cookie sheet serves as a guide to trim excess paper, and also weighs down and conforms the papers so they don't slip as easily.

'Oatmeal Raisin Cookies' from The Joy of Vegan Baking are a delectable classic.

I didn't have oat bran, so added more of the rolled oats which worked out well for me. The rest of the recipe was by the book, and I used our favorite golden raisins. It yielded 3 dozen cookies using my medium scoop, and I shared a couple dozen with my neighbors. I enclosed lists of the ingredients, and I wonder if they'll notice there's no dairy?

To tally it up, that's 4 recipes tried, and 4 outstanding successes from this cookbook. With that track record, I feel comfortable trying recipes out on guests! Anybody else experiencing the Joy? :)

Weekend Wrap-up

This is Vegan YumYum's 'Sour Cream Banana Bundt Cake' with fresh peaches. I had everything except a bundt pan, so I used a jumbo muffin tin, reducing the bake time to about 25 minutes. I had it again the next day with kiwi, and imagine any fruit would be delectable on top it's so good - moist and delicately flavored. I highly recommend this recipe, especially if you have 3 bananas that need to be reincarnated, and you're in the mood for a yum-yummy treat.

Making more of Bryanna's 'Vegan Pork Tenderloin' from the Everyday Dish DVD, because we were out... again. We really dig this roast, and I seriously can't wait for her upcoming seitan e-book.
This time, I added 1/8 tsp ground chipotle chile and 1/4 tsp poultry seasoning, and will probably do the same next time. I have the Romertopf clay cooker #111, which I recommend because it is larger and you can double the recipe, cooking 2 roasts side by side, which is what I'll do next time...

We haven't had an outdoor grill for many years, and on a whim we picked one up. We christened the Smoky Joe with boca burgers, black bean burgers, Yves Dogs, and Vegan Pork Tenderloin. The verdict? The burgers were better than ever, and Art loved the hot dogs dipped in spicy mustard. We were disappointed that the Pork Tenderloin dried out too much. Is it because we didn't put bbq sauce on until the plate (we wanted to keep it clean). Any tips on grilling seitan? We had fun cooking outside, and next time I'm throwing on some veggies.

Going to The Berry Ranch has become a tradition for us. It's a cute farm nearby that grows raspberries, blackberries, sweet corn, pumpkins, and so much more including hanging petunia baskets you see in front of the barn.
This time, we bought a flat of blackberries and a "celebrating 15 years" Berry Ranch mug. Although Art and I haven't been visiting the ranch that many years, we have been married that many coming up next month.

A Yummy Salad: greens, fava beans, beets, fresh cut corn, vegan pork tenderloin seitan sauteed with teriyaki & pomegranate juice, red bell pepper, French cornichons, and tossed with 'Simple Cider Vinaigrette' from Vive.

This is how I prepared the fava beans fresh from the FM: 1. pull open along the seams and remove the beans. 2. drop in boiling, salted water for 30 seconds. Drain & drop in ice water. 3. slice the inner skin of each bean with a fingernail and pop out the beans.

Amey, of Vegan Eats & Treats was in town for a wedding, and we were thrilled to have her and Musty over for breakfast yesterday. I took some photos, and can't wait to share them next time. See you soon!

Coconut Lemon Cupcakes

Vegan cupcakes took over my world yesterday. I baked them for a friend's birthday soiree. Just follow the recipe on pg. 107, and add lemon everywhere it says lime! (no limes left after 5 May...) The coconut flavor is abundant: coconut oil, coconut extract, coconut milk, Let's Do Organic finely shredded coconut, and topped with LDO coconut flakes. Whew, that's a whole lot of coconut, and if you're a fan like me, you must try these cakes.

I see a cupcake carrier in my future, but they all made it to the party just fine, and the lemon on top helped protect them.

Today is my birthday, and I have it narrowed down to two cakes -- one of which Art will bake tomorrow...
For now, it's off to the YMCA for my favorite dance class. She plays hip music like Tribe Called Quest & George Clinton!

Coconut, Celeraic, & Cookbook

These are 'Banana-Coconut Muffins' from VegCooking (recipe here). These muffins are fabulous! Art, Abigail, and I gobbled them all up as soon as they cooled. The banana makes them super-moist and I put some tin foil on top towards the end so the coconut wouldn't toast beyond my liking. Art put Earth Balance on his, while Abi and I ate ours plain. Liv refused to try them even though they looked suspiciously like cupcakes --- specifically VwaV's 'Coconut Heaven Cupcakes' (pg. 227). If you're a coconut lover like myself, you gotta try these recipes.

'Vicki's Celeraic Lentil Soup'
1 Celery Root, peeled & cubed
5 Carrots, cleaned & sliced
5 Serrano Peppers, minced
7 Garlic Cloves, minced
1 Bunch Fresh Parsley, chopped
1 lb. Green Lentils, washed & I found a rock!
2 tsp. Curry Powder
2 tsp. Sea Salt
1 tsp. Cumin
1/2 tsp. Paprika
1/4 tsp. Cardamom
2 Tbsp. Olive Oil
8 C. H2O

In a stockpot, saute the garlic and Serrano in olive oil over medium heat. Add the celeraic, carrots, & spices and saute a bit longer. Add the water, lentil, & parsley and put the lid on. Bring to an almost boil, then reduce heat and simmer for about an hour or more. Garnish with some fresh parsley.

Yeaah, the library emailed me saying that 'Healthy At 100' was returned and waiting for me. Since reading the John Robbins interview by Joseph Connelly in VegNews (52), I've been wanting to read this book. Other than the dishes, this is my agenda tonight. Here's the Contents:
1. The World's Healthiest and Longest Lived Peoples
2. Our Food, Our Lives
3. The Body-Mind Connection
4. Why Your Love Matters
5. The Human Spirit

And, look at my new & pretty cookbook! In (yet another article) inside VegNews (51), they review the author's organic farm bed & breakfast near Victoria B.C. In the article, Matthias gives her recipe for 'Sweet Pepper Coconut Corn Chowder' which I tried, and it was so scrumptious that I had to get the cookbook. There are several recipes I'm looking forward to. Has anybody stayed at the Phoenix Organic Farm? I've always wanted to see the Butchart Gardens, which I guess is 10 minutes away.

Kale is the "new" lettuce

I don't "hate" sandwiches. I like them well enough, and trust me, I've eaten my fair share of them -- usually as a last resort, mind you, like after crossing a desert. Which is literally true, because when we drive to CA, we try really hard to make Bishop before Erick Schat's closes because they make an amazing Veggie Sandwich. (it's hard to get fresh veggie food on the road!) But this is my sandwich story -- and this is my new high-water mark as far as sandwiches are concerned.

VwaV '
Tempeh Bacon' pg. 23 (cooked yesterday, cold from the fridge)
Tomato (organic, thin slices)
Kale (raw, hand-tear pieces from the spine)
Dijon Mustard (Woodstock Farms Organic)
Idaho Harvest Organic Golden Flax & Whole Grains Bread (Fresh & Local!)
Half of a California Avocado

I think kale is way better than lettuce in sandwiches. It has great flavor and really stands up to the sandwich squeezing & is prettier.

These are 'Lindsey's Peanut Butter Cupcakes' from La Dolce Vegan! pg. 239. They were delicious, we'll make them again & again.

This morning, I made Breakfast Ice Cream -- inspired by Gaia's post. Can't wait to share the photos with you -- it was a big hit! Have a wonderful weekend everybody!

Happy Father's Day!

I'm a proponent of beginning with dessert, and I'm so pleased to begin with 'Coconut Heaven Cupcakes' from Vegan with a Vengeance. These are easily the best cupcakes I've ever made (vegan & non), and possibly the best I've ever eaten. They are dense coconut cupcakes topped off with fluffy coconut icing. I used coconut extract instead of vanilla in the cakes & icing, let's do organic coconut, and topped them with a blueberry for color. The recipe should really come with a warning label for dieters "You can't eat just one". I'm telling ya...these are so delicious, and if you like coconut, you will LOVE these cupcakes.

Olivia painted a picture for Art. She said it had a yellow and a blue sun. She made finger prints all over and fingerpainted a bird. We only had blue, yellow, & red ~ and she mixed to also have orange, green, & purple. Every year, I pick out a new bedtime story and write Happy Father's Day & the year with a Sharpie. This year, I picked up, "What Am I?" It's a really cute animal guessing game book. Speaking of guessing games.....read on.

While she painted, I made 'Banana Bread' from "The Vegan Family Cookbook", which touts that this will be the best banana bread you will ever have! It is really good. Among other ingredients, this recipe call for egg replacer, 2 very ripe bananas, soy milk, & silken tofu. The bread also fills the house with a wonderful aroma, and I think this loaf would have gotten more attention if it weren't for the coconut cupcakes! (the only downside of beginning with dessert)

A guessing game: What vegetable do you think this is? Hints: It has thick skin, golden roots with purple shoulders. They are carrot-sweet and slightly peppery, with a golden flesh that tastes like a cross between a turnip and a yellow-fleshed sweet potato. Here is the mystery vegetable after being peeled, cubed and boiled. Below, you'll see it mashed with soybean margarine & sea salt. Comment on your mystery veggie guess & I'll comment back later with the answer.

I had a lot of fun cooking Art's Father's Day dinner. I began cleaning the collard greens by cutting out the spine, folding the leaf in half, & cutting into strips. I put the collard greens into a large pot, covered with water, added some sea salt, & brought to a boil, reducing the heat for an hour. Then, I changed the water, added some onion & soybean margarine and brought to a boil again. In a skillet, I browned each side of the Veats Bites, then added some Island Teriyaki sauce by Soy Vay along with some fresh green beans and a half can of pineapple ~ & let that simmer together. On the plate you see: a dual bed of mashed mystery vegetable and jasmine rice, topped with collard greens and veats bites & a thick tomato slice. Art called this 'Soul Food' and said it was the best meal I've made him. Wow! Happy Father's Day.
