Spelt Biscuits

I had planned on making 'Spelt Biscuits' from Vegan Lunch Box (pg.80) for Thanksgiving, but simply ran out of time. The thought of them lingered, so I made them for lunch the next day to serve with another round of left-overs. We used the donut & (my favorite) little heart cookie cutter.









A rolling pin & cookie cutters are Liv's favorite kitchen gadgets -- this was a fun activity for her.
Jennifer McCann is totally right - these biscuits come together in a flash in the food processor. Her recipe calls for "white spelt flour" as well as "whole wheat spelt flour" -- I've never seen the distinction before, have you? At our Co-op, it's just "spelt flour." So I only used that & it worked just fine. We'll be making these easy & tasty biscuits again.




I wanted to share a photo of our Little Drummer Girl. With a Daddy like Art, Liv & Abi are constantly around music & instruments -- so when we go to The Guitar Center, it's fun to see folks gather around to watch the girls demo their instruments! :o)

Oh that drummer picture is so cute! She looks so happy!

The biscuits look good too. I think spelt flour, like wheat flour, comes in white (refined) and whole (unrefined) forms. At our coop they have spelt pasta, made from white spelt flour. Whole spelt flour is a bit darker. I'm pretty sure this is it, but I could be wrong!

Wow! I love Liv's hat and Abi's sweater is adorable. Your girls are so cute.

I've never cooked with spelt flour before but your bisquits look so good, I want to give them a try.

Your biscuits sound lovely. I have also never come across a distinction in my spelt flour. I'll have to pay attention next time I'm out and about.

Love the little drummer girl photo! What a cutie. And kudos to you for braving the interior of Guitar Center. I've spent many a Saturday afternoon in there with my musician. I REALLY like the sound proof acoustic room. lol.

Hmm. I'm not sure there is a distinction--I've never seen refined spelt flour. Spelt is a form of wheat. I actually was one of the ones testing this recipe, so I've been making them for over a year. :-) They are so good! (Yeah, my claim to fame is that I'm the first person listed in the "thanks" section in the front...) However, I usually grind my own flour so I get the whole spelt and put it through my grain mill.

*Correction*
I just reread the recipe and it actually calls for "white spelt" and "whole spelt" -- so there ya' go, think my eyes played a little trick on me!

Aww, what cute shapes those biscuits are in!! :) You've got excellent kitchen helpers. (and musical entertainment if you choose to put a drum set in the kitchen. Lol!)

I can just imagine the customers watching Abi's performance in the store!! Very cute!

What cute pictures and a fun-looking activity! I used to love helping my mom make biscuits and rolling out the dough. We made biscuits for each holiday and have a whole collection of cookie cutters -- stars for the fourth of July, bells for Christmas, hearts for Valentine's day and we always shape one into a bone for my dog!

What a cute little drummer you have there! It's so great to expose kids to musical instruments at such young ages.

Those spelt bisuits look yummy. I love how you made them into fun shapes (which I'm sure the adults appreciated as much as the kids).

Nice biscuits! I love biscuits. Those girls are the cutest! I love the drummer picture. Who knows what the future holds for Abi. Lenny Kravitz has had a lady drummer for years & years - as well as many others. Go Abi!
