Curried Winter Vegetable Strudel & Snowman

Building this snowman was such a workout. It was nearly impossible for me to lift his middle, which made me wonder how they physically did this one at Vegan Ruthie's blog. He watched me through the kitchen window as I came up with this recipe.

1 Leek
1 Sweet Onion
1 Elephant Garlic Clove
1 Serrano Pepper
2 Yukon Gold Potatoes
1/2 Celeriac
1 Rutabaga
3 Carrots
Frozen Peas
1 Tbsp. Yellow Curry Paste
1 tsp. Cardamon
3Tbsp. Soybean Margarine, softened
6 Sheets thawed Fillo Dough. (fridge night before)

1. Saute in Olive Oil Leeks, Onion, Garlic, & Serrano Pepper until translucent.
2. Add Potatoes, Celeriac, Rutabaga, Carrots, 1 Cup Water, Salt & Pepper. Cover and bring to a boil, reduce heat and simmer until veggies are soft.
3. Add peas and Curry, stir through, cover and remove from heat.
4. Place 1 sheet pastry on parchment paper. Brush with melted soybean margarine. Layer and repeat.


5. Spoon vegetable mixture on pastry to an inch of edges. Fold in short edges, then roll from the long side, jelly-roll style.
6. Place roll, seam-side down on a baking sheet. Brush with margarine. With a sharp knife, make 5-7 evenly spaced diagonal slashes on top of the roll. Bake at 375* for 45 minutes, or until golden brown. I sprinkled some black sesame seeds on top before baking.

There were no left-overs!

Your strudel sounds good! And I saw Vegan Ruthie's snowman, and thought it was another wonder of the modern world. Your snowman is too cute--and now he knows how to make strudel!

That streudel looks so good! I need an excuse to use rutabega and finish up the phyllo dough in the freezer! And the snowman looks cute, though he's sad that the snow is gone. The funny thing is, we have *plenty* of snow, but can't make a snowman because it's too cold for the snow to stick together. Funny, huh?

I like your picture change. I think streudels are one of the world's prettiest foods, your ranks right close to the top too. Looks scrumptious!

No leftovers? Litle wonder! Strudel = love. Never even thought strudel could be savory. I'm so myopic about some things. I always associate strudel with apples, raisins, sweetness... This looks amazing!!

Vicki, i love the snowman. Bet you didn't make many of those back in your PB days, 'eh!? Maybe with enough water and sand... Uh, somehow "Sandman" doesn't have the same happy vibe as "Snowman" does.

I was thinking of you last night when i was off work and watching the Oscars at Peter's parents' house... when Al Gore won... how you pushed us all (nicely, mind you!) to see "An Inconvenient Truth."

And i remembered text messaging you on my phone when i was up in Arcata (Humboldt County) after seeing it on vacation... VERY important stuff. Thank you for that, Vicki.

What a fancy looking streudel. I love things wrapped in pastry, so yummy. I bet the snowman was jealous as he watched you eat through the window!

Sweet snowman! You are such an awesome mom :-) That fillo creation looks very delicious, I have some fillo dough in the freezer back home that I should use eventually.. but I have never used it before!
