Mini Meatless "Meatloaf" Sandwiches

What to do with left-over French bread rolls? Make mini meatloafs, of course! I remembered this post at Vegan Eats & Treats, and I had a copy of April's vegetarian times. When I realized the recipe was Julie's, I knew I was down because I really enjoy her 'cooking show', which is posted on her new blog.

Vegan Meatloaf. It sounds like an oxymoron, <----- looks like this, and tastes delicious.



Mini 'Meatless "Meatloaf" Sandwiches', on 'Easy French bread' rolls, with organic ketchup.
Watermelen balls & strawberry; beside Yukon Gold potatoes mashed with Silk and Earth Balance, on Kale ruffles.

Pick up a magazine for the recipe, but don't let the title fool you, the majority of the recipes inside are vegan, including 4 "Lickety-Split lunches" from Julie Hasson.

That meatloaf does sound fantastic, and now I've seen so many bloggers make it!

I have to admit, I've been a little put off by the Vegetarian Times ever since they did an article talking about how great and wonderful artificial sweeteners are! Uh, no thanks.

I get Vegetarian Times too! It's my favorite subscription! I missed the Meatloaf idea though...

Vicki, Your sandwiches look excellent! I'm glad that you're enjoying the loaf.

I was so inspired by your pea soup, that I made a huge batch to take down to the coast last weekend. It was perfect for the chilly weather. You've got a great blog!

That meatloaf does look good! I shall put it on the list of things to make when I finally have a kitchen! Oh yeah and I haven't had a chance to look at that link yet (finals.. ugh) but thanks and I am definitely interested!
