So yummy, you won't mind cleaning up after Santa!

COCOA FUDGE COOKIES

1 C. all-purpose flour

1/4 tsp. baking soda
1/8 tsp. salt
5 Tbsp. Earth Balance
7 Tbsp. unsweetened cocoa
2/3 C. white sugar
1/3 C. packed brown sugar
1/3 C. plain or vanilla soy yogurt
1 tsp. vanilla extract

Preheat oven to 350. Line cookie sheet with parchment paper. Combine flour, soda, and salt in a small bowl. Melt EB in a large saucepan. Remove from heat and stir in cocoa and both sugars. Transfer to a large bowl and add yogurt and vanilla, stirring to combine. Add flour mixture, stirring until moist. Drop by level tablespoons two inches apart on baking sheets. Bake for 10 minutes or until almost set. Sprinkle with powdered sugar if you want. Cool on pans for 2 to 3 minutes or until firm, then transfer to wire racks. Makes 19 with my medium cookie scoop.

It's a known fact that Santa loves chocolate anything. That's why he's so round and jolly. OK, I made that up, but it sounded good, didn't it? Chocolate makes me jolly, that's for sure and these cookies look delicious!
Have a very Merry Christmas Vicki and all the best to you and your lovely family.

These cookies look fantastic! Can't wait to try the recipe.

Hey, I wanted to tell you about an initiative we're trying to get on the November 2008 ballot, a measure that would provide the most basic protection to farm animals. The initiative would ban veal crates, gestation crates and battery cages from large Californian factory farms. As you probably already know these are the cruelest and most inhumane forms of extreme confinement used on big corporate farms. They are archaic and only cause an animal stress, fear and pain. Arizona, Florida and Oregon have already banned gestation crates, and Arizona has also banned veal crates. The European Union has banned all three.

We need 350,000 more signatures from registered Californian voters BY THE END OF FEBRUARY to get this most moderate of measures on the ballot. Please check out Californians for Humane Farms (www.humanecalifornia.org) for more information and how to obtain petition information. And please spread the word to end this extreme form of animal cruelty.

Anyway, sorry to use up your comment space for this, but I think? you're in Cali, and probably not enough people know about this. Just trying to spread the word :-)
Happy New Year!

Merry belated Christmas and Happy New Year! Thanks for the recipe -- I'll definitely be making those as soon as I get some soy yogurt! My family are all chocolate fiends!

Hi Vicki! Hope you and your family are enjoying some spring weather. I just wanted to send a quick note that I've been redesigning my blog and in the process unintentionally blew out all of my posts and links when I uninstalled Wordpress. I'll re-link to you once I'm up and running (in a couple of weeks or so).
