Feliz Cinco de Mayo

May 5 provides the perfect opportunity to splurge on some avocados and make a batch of 'Guacamole'. Lime is my key ingredient. And I also like to use elephant garlic, which is noted for its gigantic size and mild, delicate flavor. To that, I added finely chopped onions, tomato, fresh cilantro, sea salt & white pepper. Leave the pit in the middle and that'll help prevent discoloration. Garnish with lime & fresh cilantro. Toast some flour tortillas in the oven to dip it up!


This is a bowl of 'Lentil Soup with Avocado' which is Irma Paz-Bernstein's recipe (she was recently a featured chef in newspapers). It's a tomato base soup with onion, garlic, lentils, and zesty spices including Sriracha. I garnished it with a dollop of Tofutti, fresh cilantro, and half an avocado sliced. It was yummy having some avocado in each bite, and the "cream cheese" added a nice creamy-ness. Left-over tortilla chips from the earlier snack came in handy.


The recipe for 'Vanilla Pound Cake with Lime Glaze' came from the April '07 issue of Vegetarian Times. There's silken tofu inside, which creates a moist and lightly sweetened cake. It would please company, and fresh berries would be a nice compliment.

Oh how I wish I was at your house yesterday! Oooh my, I've had my eye one that pound cake with lime glaze since the day I read the magazine. I am just waiting for limes not to be 69 cents each!

That whole bowl of guac looks amazing and that soup is one of the most interesting concoctions I've seen in a while. Everything looks great!

As for the food processor, I have a very old Cuisinart that has done me just fine for about 7 years now and I also tend to shop for big things like that at BB&B because I have a whole stack of 20% off coupons. Email me if you want any, they are non-expirable and sometimes you can double them.

The food looks so tasty. Good luck with your food processor shopping. I have a Kitchen Aid that I've been happy with. I did have to replace the lid & bowl after several years. The "latch" that clicks the lid into place stopped working correctly...it would click the lid into place but wouldn't release it without the use of a screwdriver. LOL I haven't had any problems with the base/motor *knock on wood*

I don't have much food processor wisdom, I'm actually eager to see what others say, and what you end up with. I eventually want one, right now I have a little one that works, but isn't anything to write home about.

Beautiful cinqo de mayo spread! I also splurged on an avocado, some limes, and some...cerveza... this past weekend!

The food looks delish! I've been wanting to try that lime cake from Veg Times. You inspired me to bake one this week.

I have a Cuisinart and LOVE it! Prior to this I had a Kitchen Aid food processor. It was a wonderful machine, except the plastic bowl wasn't dishwasher safe. I often process oily foods in the machine (like sundried tomatoes, olives, etc...) and found it's hard to get the greasy residue off without the dishwasher. I put my Kitchenaid bowl in the dishwasher anyways, but it got little hairline cracks.

So they're both great machines, but there are subtle differences.

Oh Cinco de Mayo is a great excuse to have some wonderful guacamole. And like Leslie I've been waiting for avocadoes not to be 69 cents each (they are exactly that price at my market too).

OOOhh and a birthday coming up! FUN, FUN, FUN! As for food processors- I bought mine last summer from Costco. It's a blender/food processor combo and it has worked just fine. I don't know if Costco carries the same one, but it was definitely a good deal! Although now I'm wishing that I had saved up and bout a vita mix or other super power blender instead. Do share when you make your decision!

Hi, Vicki! The guacamole and esp. the soup look awesome! I'm glad you reviewed the pound cake recipe. I almost made it yesterday to serve with strawberries, so next time I have berries I'll definitely bake it.

I have had my KitchenAid food processor for several years. I use it all the time and love it. Most of my kitchen gadgets are KitchenAid, so that's what I recommend! Have fun shopping!

if you're interested in a Cuisinart food processor, do check out Costco. They usually have very good deals on them (both in store and online).

hi leslie: we would have loved haveing you here! our limes are less than yours @ .39 -- but the little avocados were more @ .99 each -- so it really was a splurge. i miss california produce.

Funny!
I almost made that pound cake for the dinner party I went to two nights ago. It's definitely on my list. I love lemony desserts, and there are so many fresh strawberries at the farmers market these days...

Had to come back and say I have a Cuisinart food processor - duh! I have a KitchenAid MIXER. So change my vote to Cuisinart!

I too saw that recipe in the recent magazine. I wanted to make it, but alas, I used my silken tofu in Susan's mini tofu quiche. This is one recipe that will have to wait until next week.

i've been a ghost around here. man it's been a tough month. I am obessesed with avocados. I eat them entirely too much :) I have a cucumber, avocado, rice and nori salad. it was wonderful. the day before that, i made some gauc too!
